Gross profit by menu, missing stock and risky actions
See which menu items make the most or least profit, how much stock went missing in stock counts, and review voids, refunds, discounts, PIN approvals and cash drawer differences.
Gross profit by menu
The Gross margin tab shows sales after discounts, ingredient cost, gross profit and profit margin for the chosen period and branch, the items that make the most and the least, and a table of all menu items or all categories. Search, and sort by profit, margin or sales. Cost is recipe quantity times the latest ingredient cost.
Steps
- Choose the dates and branch
- Read the summary cards, then check the items that make the leastAn item marked Loss needs a price or cost check.
- Switch View by between menu items and categories, and sort as needed
- Tap Export Excel to keep a file
Good to know
- If it says the profit cannot be calculated yet, some items have no recipe or an ingredient has no cost. Tap Add recipes in Menu, then come back.
Missing stock (from stock counts)
The Stock loss tab lists ingredients counted short of what the system expected and what that cost (quantity missing times latest cost), largest loss first. An item is marked Check when 10% or more of what sales should have used is missing. This report only learns from stock counts.
Steps
- Count stock in the period firstWithout a count the page stays empty; tap Count stock.
- Choose the dates and branch
- Look at items marked Check first
Good to know
- Waste you already recorded is not in this report; it is on the waste report.
- If some items have no cost, the total value is not shown. Receive stock with a price to give them a cost.
Risk review: voids, refunds, discounts and the cash drawer
The Risk review tab summarises voided bills, refunds, discounts and points, PIN approvals, and cash drawer short or over by who closed the shift, for the chosen period. It also lists warning signs (stock variance, waste, stock adjustments) and how many actions each person recorded, to spot unusual activity.
Steps
- Choose the dates and branch
- Tap the voided bills or refunds card to open those bills in Bill history
- Check the cash drawer short-or-over table, and tap Open shift history to dig deeper
Good to know
- Voids, refunds, discounts and the cash drawer follow the chosen branch; PIN approvals and each person's actions count the whole store.
- The cash drawer table appears only for people allowed to see shift closing.
The report says I have no permission
Gross margin and Stock loss are built from ingredient costs, so only people who can see costs can open them. If it says you don't have permission to see costs, ask the owner to allow cost viewing for your role. Risk review needs permission to see financial reports.
