Record waste from the back office and the kitchen screen
Record what is thrown away with a reason so stock stays right, let the kitchen report waste from the KDS, and review and report waste by day.
Record waste from the back office
On Waste, pick the branch and ingredient, enter the amount in the unit you weighed or counted, pick a reason and save. Stock at that branch is deducted at once. The reasons are Expired, Dropped / damaged, Over-prepared, Wrong menu item, Training / tasting, or Other with your own text.
Steps
- Pick the branch and the ingredient thrown away
- Enter the amountUse the stock unit or the purchase unit; it is converted to the stock unit for you.
- Pick the reason
- Check that all four items under Before you save are done, then choose Record waste
Good to know
- You can record more than is in stock; the balance goes negative.
- When the store tracks lots, the earliest-expiring lot is used first.
Let the kitchen record waste on the kitchen screen
On the kitchen screen, choose Record waste, then the branch, ingredient, amount and reason, and a station if you like. Stock is deducted at once and the entry goes to a manager for review. Kitchen staff do not see costs.
Steps
- On the kitchen screen, choose Record waste
- Pick the branch (if the store has several) and the ingredient
- Enter the amount, pick a reason and add a station if any
- Save, then record the next one
Good to know
- If the screen says Waste logging is not enabled and to ask a manager, kitchen waste logging is switched off for the store; the manager can ask the owner to switch it on in Settings › Store features.
Review waste reported by the kitchen
Kitchen waste lists what the kitchen reported, newest first. Check each entry, then choose Acknowledge if it is right or Flag if it looks wrong so you can talk to the kitchen team.
Good to know
- Acknowledging or flagging needs inventory management access.
- Flagging does not return stock; it was deducted when the kitchen recorded it.
See the daily waste report
The Report tab on Waste shows today's waste, the number of entries, the biggest loss and entries by day, filtered by branch and date range. Entries from the kitchen are labelled as kitchen reports.
Good to know
- The estimated waste value is shown only to people allowed to see costs.
Waste recorded by mistake
A saved waste entry cannot be edited or deleted, so the record can always be checked later. Check the amount and unit in the summary before saving. If you already entered it wrongly, count that ingredient so stock is set to what is really there.
